Pumpkin Pie

3/4 cup sugar
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
2 cups pumpkin (one 16oz can)
1 1/2 cups evaporated milk
2 eggs, beaten
1 nine inch pie crust (not graham cracker crust)

Heat oven to 425 degrees F. In a large bowl, combine all filling ingredients and blend well. Place the pie crust into the pan and pour the combined ingredients into the crust. Bake at 425 degrees for 15 minutes. Reduce the oven temperature to 350 degrees F and continue to bake for 40 to 50 minutes more or until knife inserted near the centre comes out clean. Cool to room temperature and serve with whipped cream or your favourite topping (vanilla ice cream is good too). One pie should make about 8 servings.
